Beef Hatkora
Beef Hatkora (Sylheti: ꠉꠞꠥ ꠖꠤ ꠢꠣꠔꠇꠞꠣ, romanized: Goru di Hatkora) is the traditional dish of Sylhet region in Bangladesh.[2] Hatkora is a special fruit cooked with beef is a very famous curry in Sylhet.[3][4] It has also famed outside the Sylhet.[5][6] At the time of Eid-ul-Adha, it is a famous dish.[7][8] Hatkora cooking of Sylhet is not same as the other regional cooking styles of Bangladesh at all.[9] Because of using the citrus variety fruit with curry, both of its taste and aroma are different from all other Bangladeshi curries. This scented, bitter and slightly sweet citrus fruit is commonly used in Sylheti dishes.[10] A popular khatta or Tenga curry is made with the bones of cow feet and Hatkora. In addition, this fruit is used to cook with fish[11] and different kinds of meat as well.[12][13]

Enriched with Vitamin C and antioxidants, Hatkora curry is generally eaten with rice.[14] Not only a popular khatta or Tenga curry is made with the bones of cow feet and Hatkora but also different kinds of meat is used as well.
Ingredients
Vegetable oil, cinnamon, cardamom, fenugreek seeds, salt, onions, paste of garlic and ginger, beef chuck, chilli powder, turmeric, ground coriander and cumin, garam masala, Hatkora and a tomato.[15][16]
Procedure
Oil is heated in a large, heavy bottomed, non-stick saucepan. Then cinnamon, bay leaves, cardamom, star anise and fenugreek seeds are added to reheat for swirling in the oil to release the flavours.[17][18] Adding beef, salt, spices and green chillies it is stirred for a while and then covered.[19] Cutting the piece of Hatkora into wedges and then chop each wedge into small pieces.[20] Hatkora is added then followed up some hot water.[21] When the curry is boiled, it is simmered for a while.[22] After that chopped coriander is added until the meat is tender.
Serve
Beef Hatkora is served with glutinous rice or boiled white rice when salad of cucumber, tomatoes and onions are used as a side dish.[10] It is also eaten with pilau,[9] Khichdi and parata.[23]
